I want to change the theme and appearance of Composite site using Bootstrap option (there is another option?)
All step by step, for example: http://docs.composite.net/Getting-started/Starter-sites/Twitter-Bootstrap/Bootstrap-Sample-Themes and http://docs.composite.net/Getting-started/Starter-sites/Twitter-Bootstrap/Bootstrap-Theming makes reference to the folder "~/Frontend/Styles/bootstrap/2.3.1/".
What I am doing wrong? Why my site doesn't have this folder? I have to create it manually?
I've seen videos and also have the folder "~/Frontend/Styles/bootstrap/2.3.1/"
Here, http://community.composite.net/Blog/2012/08/17/Say-hello-to-Twitter-Bootstrap, it is another step by step where appears the folder.

That article was written for the version of Composite available then (3.2?) and the set of its Starter Sites.
It might be somewhat outdated by now.
e.g. Step 4: In "2 – Fine tuning" you can keep the defaults, but consider unchecking all the checkboxes to keep things minimal. Just make sure that "Responsive Bootstrap 2.0.4" and "LESS" are selected. Now at http://www.initializr.com/ it looks somewhat different.
