I was just about to mark @napernik 's answer as 'The Answer' until I saw @mawtex 's reply and even though @napernik 's explanation was correct and made sense, the fact that it is now working means his answer is no longer relevant. So, thanks @mawtex for investigating and trying to replicate the issue. I guess you must have waved your magic wand because the preview is now working on the original sample site I had created in Azure Web Apps (East US) and I did not have to create a new one. Awesome!!! However it got corrected is of no consequence to me, I'm just thrilled that it works now.
BTW, after watching some (older) videos on the Composite C1 youtube channel, I am completely sold on Composite C1 and will push forward with plans to use it as my CMS for all future projects (and most likely recommend migrating customers sites from existing frameworks).
